Description

We should update the included servlet API jar to at least Servlet API 4.0. This is the last version that uses the javax. namespace.

This also allows us to configure the default request encoding for the ServletContext in the ServletInit listener.

Along with this, we can throw out all of the old XML files (META-INF/context.xml, WEB-INF/context.xml, WEB-INF/jetty*-web.xml) and update the web.xml for the examples.
